Easter was here and gone – but there was time enough to make bird nests

I know…a tad bit late.. That is the same ol story with me.. Great intentions and then the procrastinator in me creeps up somehow..
For Easter my family and I had a huge feast which consisted of:  ham, turkey, potatoes, stuffing, veggies, appetizers and desserts of course !

That brings me to my next recipe!  A new favorite of mine… Little bird nests
I could eat a few of these  – not a problem – OH WAIT I DID ~!

Chocolate Bird Nests

These little guys are so easy to make – but yes a tad bit on the messy side!!!

Of course I didn’t take exact measurements because I wasn’t sure how much peanut butter/chocolate/chow mein noodles I would require …

Ingredients

* 2 – 1/4 Cups Chow Mein Noodles
* 2 Cups Chocolate Chips
* 1/2 Cup Peanut Butter
* 36 mini eggs (peanut butter, chocolate, crispy etc)

Method

* In a large microwaveable bowl – melt the chocolate chips and peanut butter together (approximately 2 mins on high stirring every 30 seconds).
* Add the chow mein noodles a little at a time mixing everything well. You want all the noodles to be covered with CHOCOLATE!!
* Take a large spoonful form in your hand (to resemble a nest) and indent the middle a tiny bit
* Place on parchment paper and add the eggs so they adhere to the chocolate – we don’t want to lose our eggs here people!!
* If you want to speed up the process place in the fridge for about 20 mins to harden or leave on the counter.

VOILA – done! They taste every bit as good as they look !
