My first fruit pie !!

I can’t believe how great they taste & to think I had never made one before… What was I thinking – umm apparently I wasn’t……….
Prior to adding the glaze – the pie was beautiful – post glaze – not quite as bold in color but man it was tasty.  The glaze was made out of pineapple juice – so it was sweet and delish !

I will admit I tried making a shortbread crust for the pie at first – didn’t turn out the way I liked it was too crumbly and didn’t withstand the transfer from the pan..so I then decided on a sugar cookie base – much better… sturdier and just as tasty !

I think I need to purchase a new plates – all my pics seem to have the same ones 🙂  and that is a tad bit boring !
This is the pic pre-glaze …much nicer photo – afterwards it was swimming in pineapple juice.

I didn’t end up writing down the sugar cookie recipe – but I do remember the glaze was about 3/4 cup pineapple juice and 1 tsp of cornstarch and 2 tsps sugar – brought to a boil over medium heat and then simmered for about 5-6 minutes to thicken a bit..  I will be making this again soon – with the addition of  kiwis and blueberries !  Next time I will get a crust shot too!
